Alex's Mum's Pear Pie

Every son should have a Mum who can cook a good fruit pie and Alex's does a really rather splendid pear one. She's been good enough to let us in on the recipe.

You will need:

  • 3 oz/80gr each plain and self-raising flour
  • pinch of salt
  • 2oz/50gr castor sugar
  • 4oz/110gr butter
  • 2oz/60gr walnuts
  • 1 egg yolk
  • A few drops vanilla essence
  • 3 tblsp semolina
  • grated rind and juice 1 small orange
  • 1oz/25gr Demerara sugar
  • 2lb/900gr pears (ripe but firm)

Cooking instructions

1. Sift the flours and salt into a large bowl

2. Add the sugar, butter, grated walnuts, egg yolk vanilla + 1tblsp water

3. Work the mixture to a soft dough and chill in the fridge for 20 minutes or so.

4. Line a 9" dish with the chilled pastry and sprinkle with 1 tbsp semolina

5. Combine the remaining semolina with the demerara sugar, orange juice and rind.

6. Peel and core the pears, reserve 6 halves and chop the remainder.

7. Put the chopped pears into the pastry base and arrange halves on top

8. Add the orange/semolina mixture and top with remaining pastry

9. Bake at 200 C for 50-60 minutes

10. Serve with good quality ice cream (especially home made marmalade and orange flower).  

Mumsy note found at the bottom of Alex's school bag: "I find it can be a bit of a stretch with the pastry and usually make a little bit more. Also it browns quite quickly so you may need to cover with foil after 30 min or so. The pastry can also be used for a pear or apple tarte tatin. Love Mum
